En el\u00a0 2020 la producci\u00f3n nacional supero el mill\u00f3n de toneladas con ingresos por exportaci\u00f3n del orden de US$ 4.389 millones. El a\u00f1o 2022 se cosecharon 1.065.298 toneladas\u00a0 y los ingresos por exportaci\u00f3n fueron del orden de US$ 6.605 millones, cifra que consolida a la industria del\u00a0 salm\u00f3n como la segunda actividad exportadora despu\u00e9s del cobre\u00bb.<\/p>\n<p>\u00abDe acuerdo a las cifras reportadas, la industria del salm\u00f3n en el 2021 gener\u00f3 alrededor de 71.000 puestos de trabajo, entre empresas productoras y proveedoras, y\u00a0 los ingresos a los municipios donde la industria opera, fueron de $16.525 millones por pago de patentes\u00bb.<\/p>\n<p><img decoding=\"async\" class=\"wp-image-48913 size-large alignleft\" src=\"https:\/\/www.mundoacuicola.cl\/new\/wp-content\/uploads\/2023\/02\/VentaDeSalmonInocuidad-e1675289491585-300x400.jpg\" alt=\"\" width=\"300\" height=\"400\" srcset=\"https:\/\/www.mundoacuicola.cl\/new\/wp-content\/uploads\/2023\/02\/VentaDeSalmonInocuidad-e1675289491585-300x400.jpg 300w, https:\/\/www.mundoacuicola.cl\/new\/wp-content\/uploads\/2023\/02\/VentaDeSalmonInocuidad-e1675289491585-200x267.jpg 200w, https:\/\/www.mundoacuicola.cl\/new\/wp-content\/uploads\/2023\/02\/VentaDeSalmonInocuidad-e1675289491585-100x133.jpg 100w, https:\/\/www.mundoacuicola.cl\/new\/wp-content\/uploads\/2023\/02\/VentaDeSalmonInocuidad-e1675289491585.jpg 480w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>\u00abComo no estar orgullosos de esta industria que se inici\u00f3 a fines de 1970\u00b4s,\u00a0 y que en\u00a0 1992 convirti\u00f3 a nuestro pa\u00eds en el segundo productor mundial de salm\u00f3n, con una cosecha\u00a0 de 58.000 toneladas?\u00a0 De acuerdo a lo se\u00f1alado por Salm\u00f3nChile,\u00a0 las\u00a0 exportaciones\u00a0 de salm\u00f3n actualmente llegan a m\u00e1s de 100 pa\u00edses de los cinco continentes y\u00a0 el 99% de la producci\u00f3n est\u00e1 certificada, cumpliendo con los altos est\u00e1ndares exigidos por el mercado internacional. Sin embargo, los est\u00e1ndares de calidad no se condicen con el salm\u00f3n comercializado\u00a0 en los mercados y ferias de las regiones, donde esta importante actividad se realiza. Basta recorrer los locales donde se expende el \u201csalm\u00f3n chileno\u201d para darnos cuenta que no cumple con ninguna certificaci\u00f3n que nos de la certeza que el producto es inocuo para el consumidor\u00bb.<\/p>\n<p>\u00abSin dudas, la industria del salm\u00f3n ha tra\u00eddo beneficios econ\u00f3micos y desarrollo\u00a0 a las regiones en donde esta actividad se realiza, pero sigue siendo objeto de una serie de criticas,\u00a0 relacionadas principalmente con los efectos que genera en el medio ambiente acu\u00e1tico, lo que ha llevado a que la industria mejore sus procesos con foco en la sostenibilidad ambiental.\u00a0 Pero, \u00bfporqu\u00e9 ninguna autoridad y tampoco ning\u00fan gremio de la industria se ha preocupado de la calidad del salm\u00f3n que se comercializa en los mercados y ferias?.\u00a0 La seguridad alimentaria debiera ser una prioridad para <span style=\"font-weight: 400;\"><a href=\"https:\/\/www.mundoacuicola.cl\/medios\/?url_camp=192\"><img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mundoacuicola.cl\/medios\/?camp=192\" alt=\"\" width=\"300\" height=\"250\" \/><\/a><\/span>la\u00a0 industria del salm\u00f3n, no solo por los riesgos que pueda generar en el consumidor un salm\u00f3n que no cumple con la cadena de fr\u00edo, o que es mortalidad extra\u00edda desde centros de cultivo, tambi\u00e9n\u00a0 afecta la imagen de la industria.\u00a0 Estas ferias y mercados no solo son visitadas por turistas\u00a0 nacionales, tambi\u00e9n por turistas extranjeros que son atra\u00eddos por las ferias locales y que no entienden como en Chile se puede comercializar esa calidad de salm\u00f3n\u00bb.<\/p>\n<p>\u00abProbablemente, si el consumidor chileno pudiera tener acceso a un salm\u00f3n de calidad, a un precio razonable, la imagen de la industria ser\u00eda m\u00e1s positiva\u00a0 y el salm\u00f3n un orgullo nacional\u00bb.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Reproducimos la columna de opini\u00f3n de la Dra.
