Compuesto por las sociedades de Chile, Argentina y Uruguay, la Dra. Sara M. Rodr\u00edguez particip\u00f3 de la instancia, representando a la Universidad Cat\u00f3lica de la Sant\u00edsima Concepci\u00f3n (UCSC).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">En la oportunidad, la acad\u00e9mica expuso resultados finales de experimento <\/span><b><i>in vitro<\/i><\/b><b> sobre la influencia del consumo de alcohol en la mortalidad y movimiento de los par\u00e1sitos anisakis presentes en los filetes de pescado crudo.<\/b><span style=\"font-weight: 400;\"> El estudio se encuentra bajo revisi\u00f3n en revista cient\u00edfica.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Adem\u00e1s, en el marco del Proyecto de Subvenci\u00f3n a la Academia (SIA 85220111), se presentaron los resultados del <\/span><b>efecto de las bajas temperaturas en la mortalidad de los par\u00e1sitos anisakis en peces de consumo humano.<\/b><span style=\"font-weight: 400;\"> \u201cEl experimento consisti\u00f3 en utilizar filetes de 150 gramos de merluza, reineta y congrio a -20\u00b0 C, considerando 24, 48, 72, 96 y 120 horas. Quisimos identificar a cu\u00e1ntas horas de estar congelado mor\u00edan el 100% de las larvas\u201d, complement\u00f3 la acad\u00e9mica.<\/span><\/p>\n<h3><strong>Efectos<\/strong><\/h3>\n<p><span style=\"font-weight: 400;\">Sobre los resultados, estos difieren. Mientras que en el caso de la merluza, a las 96 h. de exposici\u00f3n a menos de -20\u00b0 C mueren todos sus par\u00e1sitos, el congrio tarda 120 h. y en la reineta, no se encontraron par\u00e1sitos en los 36 individuos analizados. \u201cEstudios previos han demostrado que la prevalencia de <\/span><i><span style=\"font-weight: 400;\">Anisakis<\/span><\/i><span style=\"font-weight: 400;\"> en la reineta es baja y estos concuerda con nuestros resultados, los cuales muestran que no encontramos ning\u00fan par\u00e1sito, por lo que ser\u00eda un pescado ideal para consumirlo como ceviche. La probabilidad de encontrar un par\u00e1sito es muy baja\u201d, explic\u00f3 la Dra. Rodr\u00edguez.<\/span><\/p>\n<p><b>Los resultados de la diferencia en la mortalidad seg\u00fan los tiempos de congelaci\u00f3n se relacionan con la composici\u00f3n qu\u00edmica de la carne del filete del congrio.<\/b><span style=\"font-weight: 400;\"> \u201cEl congrio posee m\u00e1s l\u00edpidos en su musculatura que la merluza. Es por ello que necesita m\u00e1s tiempo para que se congele el m\u00fasculo y as\u00ed poder traspasar el fr\u00edo al par\u00e1sito\u201d, agreg\u00f3.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Respecto a sus impresiones al participar de este evento, resulta fundamental ampliar la red de contactos, donde participaron m\u00e1s de 800 asistentes. \u201cFueron seis sesiones en paralelo, donde hab\u00edan plenarias donde participaron profesores consagrados en el \u00e1rea de ecolog\u00eda tanto de Chile, como Uruguay y Argentina. Se trataron de tem\u00e1ticas del \u00e1rea marina, terrestre, andina, mam\u00edferos, vertebrados e invertebrados\u201d, coment\u00f3.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La instancia sirvi\u00f3 para complementar datos y organizar futuras investigaciones.
