{"id":84833,"date":"2026-01-27T15:40:16","date_gmt":"2026-01-27T19:40:16","guid":{"rendered":"https:\/\/www.mundoacuicola.cl\/new\/?p=84833"},"modified":"2026-01-28T15:28:43","modified_gmt":"2026-01-28T19:28:43","slug":"estudio-identifica-equipos-criticos-en-la-persistencia-de-listeria-en-plantas-de-salmon-ahumado","status":"publish","type":"post","link":"https:\/\/www.mundoacuicola.cl\/new\/estudio-identifica-equipos-criticos-en-la-persistencia-de-listeria-en-plantas-de-salmon-ahumado\/","title":{"rendered":"Estudio identifica equipos cr\u00edticos en la persistencia de Listeria en plantas de salm\u00f3n ahumado"},"content":{"rendered":"<p data-start=\"338\" data-end=\"692\">Un estudio cient\u00edfico analiz\u00f3 las fuentes de contaminaci\u00f3n y las medidas de control frente a <em data-start=\"431\" data-end=\"455\">Listeria monocytogenes<\/em> en una planta de procesamiento de salm\u00f3n ahumado asociada a brotes de listeriosis, aportando evidencia concreta sobre los factores que favorecen la persistencia del pat\u00f3geno en ambientes industriales de alimentos listos para el consumo.<\/p>\n<p data-start=\"694\" data-end=\"992\">La investigaci\u00f3n fue desarrollada por <strong data-start=\"732\" data-end=\"825\">investigadores de Nofima, Norwegian Institute of Food, Fisheries and Aquaculture Research<\/strong>, a partir del seguimiento detallado de un caso real vinculado a dos brotes de listeriosis ocurridos en Noruega, ambos asociados a productos de salm\u00f3n ahumado en fr\u00edo.<\/p>\n<p data-start=\"994\" data-end=\"1369\">Publicado en la revista <em data-start=\"1018\" data-end=\"1062\">International Journal of Food Microbiology<\/em>, el estudio documenta la aplicaci\u00f3n de un enfoque estructurado de b\u00fasqueda y eliminaci\u00f3n (\u201cSeek and Destroy\u201d) durante once semanas, que incluy\u00f3 muestreos intensivos, desarme profundo de equipos, tratamientos t\u00e9rmicos, desinfecciones qu\u00edmicas y an\u00e1lisis gen\u00f3micos mediante secuenciaci\u00f3n completa del genoma.<\/p>\n<p data-start=\"1371\" data-end=\"1816\">Los resultados permitieron identificar a una m\u00e1quina de desuello como la principal fuente de contaminaci\u00f3n persistente, en particular sus cintas transportadoras y un rodillo con interfaces de pl\u00e1stico y metal, donde <em data-start=\"1587\" data-end=\"1611\">Listeria monocytogenes<\/em> logr\u00f3 sobrevivir pese a rutinas exhaustivas de limpieza y desinfecci\u00f3n. El an\u00e1lisis gen\u00f3mico confirm\u00f3 que la misma cepa estuvo presente de forma sostenida en el ambiente productivo y en el producto final.<\/p>\n<p data-start=\"1818\" data-end=\"2314\">Seg\u00fan concluye el estudio, la eliminaci\u00f3n definitiva de la contaminaci\u00f3n solo se logr\u00f3 tras el retiro y reemplazo del equipo afectado, junto con el fortalecimiento de los protocolos sanitarios.
